My dad began boiling on the day we gathered 1,650 gallons of sap. We had to start boiling down the sap because we had gathered so much that we were getting close to having no storage space. We never planned on boiling this soon, but the trees don't wait up for you, you've got to keep up with them. Within the first 3 days of boiling we made 25 gallons of maple syrup. We still have a lot of sap to boil down until we are caught up.
